Kalua Pork is slow-cooked, smoky and impossibly tender shredded pork, traditionally made by roasting a whole pig in an imu. An earth oven, lined with hot volcanic stones and covered with banana leaves. The result is meat that tastes both ancient and elemental: salty, silky and infused with woodsmoke.
