Ingredients
3 cups cooked day-old jasmine rice
100 g cooked small shrimp
50 g diced cooked ham or char siu
2 eggs lightly beaten
1/2 cup peas
1/4 cup finely diced carrots
2 spring onions chopped
1 tablespoon light soy sauce
A little chicken stock or water to moisten
Salt and white pepper to taste
Oil for stir-frying
Steps
Lightly break apart the cold rice with your hands or a spoon so the grains separate before cooking.
Heat a little oil in a wok, scramble the beaten eggs just until they set softly, then remove and set aside.
Add more oil and stir-fry the shrimp, ham, peas, and carrots briefly so they warm and release their natural aroma.
Add the rice, tossing it quickly over high heat so every grain becomes glossy and lightly toasted.
Return the eggs to the wok along with soy sauce, a splash of stock or water, and season with salt and white pepper.
Continue stirring until the rice is hot, fluffy, and evenly coloured.
Finish with chopped spring onions and serve immediately.
