Ingredients

3 ripe tomatoes, finely diced

1 small white onion, very finely chopped

3 tbsp white wine vinegar or apple cider vinegar

3 tbsp vegetable oil or olive oil

Salt, to taste

Black pepper (optional)

Fresh parsley or coriander, finely chopped (optional)

Steps

  1. Combine the tomato and onion in a bowl.

  2. Add the vinegar and oil and mix gently.

  3. Season with salt and pepper to taste.

  4. Stir in herbs if using.

  5. Rest briefly before serving to allow flavours to combine.

Serve alongside grilled meats, rice and beans, or roasted vegetables. Added at the table rather than cooked into dishes.
