Ingredients

300 g savoiardi (ladyfinger) biscuits

500 g mascarpone

4 eggs, separated

100 g sugar

300 ml strong espresso, cooled

Cocoa powder, for dusting

Steps

  1. Whisk the egg yolks with the sugar until pale and thick.

  2. Gently fold the mascarpone into the yolk mixture until smooth.

  3. Whisk the egg whites to soft peaks and fold them into the cream.

  4. Dip the savoiardi briefly into the cooled espresso.

  5. Arrange a layer of soaked biscuits in a dish.

  6. Spread a layer of mascarpone cream over the biscuits.

  7. Repeat layers, finishing with cream on top.

  8. Cover and chill for at least 4 hours.

  9. Dust with cocoa powder before serving.

Serve well chilled, sliced or spooned. Traditionally finished with cocoa only, without additional flavourings.
