Ingredients

800 g pork shoulder or chicken thigh, cut into chunks

3 tbsp olive oil

Juice of 1 lemon

2 cloves garlic, minced

1 tsp dried oregano

Salt and black pepper

Wooden skewers, soaked

Steps

  1. Combine the olive oil, lemon juice, garlic, oregano, salt, and pepper.

  2. Add the meat and mix well to coat evenly.

  3. Cover and marinate for up to 2 hours, or proceed directly if short on time.

  4. Thread the meat onto skewers.

  5. Grill over high heat, turning regularly, until cooked through and lightly charred.

To serve

Serve hot, on the skewer or wrapped in pita with simple accompaniments such as onion or herbs. Often eaten on the move.
