Herbed Stew with Fenugreek

Ingredients

600 ml meat or vegetable broth

1 tomato, finely chopped

1 green chilli, minced

1 tsp ground cumin

½ tsp turmeric

Salt, to taste

1 tbsp fenugreek foam

Fresh coriander, chopped

Steps

  1. Soak fenugreek seeds overnight. Drain, then whip with fresh water until pale and foamy. Set aside.

  2. Bring broth to a gentle simmer.

  3. Add tomato, chilli, and spices; cook for 10–15 minutes.

  4. Adjust seasoning and stir in coriander.

  5. Finish with fenugreek foam just before serving.
