Ingredients

200 g kefalograviera or kasseri cheese, cut into 1.5–2 cm slices

Plain flour, for dusting

Olive oil, for frying

Lemon wedges

Steps

  1. Lightly dust the cheese slices with flour, shaking off excess.

  2. Heat a thin layer of olive oil in a small pan over medium-high heat.

  3. Fry the cheese until golden on one side, then turn and brown the other side.

  4. Remove from the pan and drain briefly.

  5. Serve immediately with lemon.

Serve hot as part of a meze spread, with bread. Typically eaten with drinks.
