Fries with Cheese Curds & Gravy

Ingredients

1 kg potatoes, cut into fries

Vegetable oil, for frying

Salt


Gravy

2 tbsp butter

2 tbsp plain flour

500 ml beef or chicken stock

Black pepper


To finish

200 g fresh cheese curds (room temperature)

Steps

  1. Heat oil to 170°C and fry the potatoes in batches until pale and cooked through. Remove and drain.

  2. Increase oil temperature to 190°C and fry the potatoes again until golden and crisp. Season with salt.

  3. Melt the butter in a saucepan, stir in the flour, and cook for 1–2 minutes.

  4. Gradually whisk in the stock and simmer until thickened. Season with pepper.

  5. Place the hot fries on a serving dish, scatter over the cheese curds, and pour over the hot gravy.

  6. Serve immediately.


Serve hot and freshly assembled. Traditionally eaten with a fork and shared casually.
