Peanut Soup

Ingredients
200 g smooth natural peanut butter
500 g chicken pieces (or goat meat or fish)
1 onion, chopped
3 tomatoes, chopped
2 tbsp tomato paste
2 cloves garlic
1 thumb-sized piece fresh ginger
1 litre water or light stock
Salt, to taste
Ground chilli or fresh chilli (optional)
Steps
Place the meat, onion, garlic, ginger, and water in a pot and bring to a gentle boil.
Reduce heat and simmer for 25–30 minutes until the meat begins to soften.
Blend the tomatoes and tomato paste until smooth and add to the pot.
Simmer for 10–15 minutes until the mixture thickens slightly.
In a bowl, loosen the peanut butter with some hot broth, then stir it into the soup.
Simmer gently for 20–25 minutes, stirring occasionally to prevent sticking.
Season with salt and chilli if using, and adjust thickness with water if needed.
Serve hot with fufu, rice balls, or boiled yam. The soup is eaten as a shared meal, with starch used to scoop.
