Ingredients

700 g pork shoulder or neck, thinly sliced

3 cloves garlic

2 coriander roots or stems

2 tbsp soy sauce

1 tbsp oyster sauce

1 tbsp fish sauce

1½ tbsp palm sugar or brown sugar

1 tbsp vegetable oil

Bamboo skewers, soaked

Steps

  1. Pound the garlic and coriander root into a paste.

  2. Combine the paste with soy sauce, oyster sauce, fish sauce, sugar, and oil.

  3. Add the pork and mix well to coat evenly.

  4. Cover and marinate for at least 2 hours.

  5. Thread the pork onto skewers.

  6. Grill over medium-high heat, turning frequently, until cooked through and lightly caramelised.

Serve hot, often with sticky rice. Commonly eaten for breakfast or as a snack.
