Ingredients

Pastry

200 g plain flour

100 g cold butter, cubed

2 tbsp sugar

1 egg

Pinch of salt


Filling

750 ml milk

60 g butter

80 g sugar

3 eggs

40 g cornflour

30 g plain flour

1 tsp vanilla extract

Ground cinnamon, for dusting

Steps

  1. Combine the flour, sugar, and salt, then rub in the butter until crumbly.

  2. Add the egg and mix until a dough forms. Chill for 20 minutes.

  3. Roll out the pastry and line a tart tin. Prick the base and bake at 180°C for 15 minutes until lightly set.

  4. Heat the milk and butter in a saucepan until just hot.

  5. Whisk the sugar, eggs, cornflour, flour, and vanilla until smooth.

  6. Gradually whisk in the warm milk, then return the mixture to the pan.

  7. Cook gently, stirring constantly, until thickened.

  8. Pour the filling into the baked pastry case and smooth the surface.

  9. Allow to cool, then chill until fully set.

  10. Dust with cinnamon before serving.

Serve chilled or at room temperature, sliced. Commonly served with coffee or tea.
