Ingredients

4 ripe bananas or 500 g sweet potato, peeled and sliced

400 ml coconut milk

250 ml water

80–120 g sugar (to taste)

1 cinnamon stick

1 vanilla pod or 1 tsp vanilla extract

Pinch of salt

Steps

  1. Place the coconut milk, water, sugar, cinnamon, vanilla, and salt into a pot and bring to a gentle simmer.

  2. Add the bananas or sweet potato and stir gently to coat.

  3. Simmer uncovered over low heat for 30–40 minutes, stirring occasionally, until the fruit is very soft and the liquid has thickened slightly.

  4. Taste and adjust sweetness if needed.

  5. Remove from heat and allow to cool slightly before serving.

Serve warm or at room temperature, on its own or with plain bread. Ladob thickens further as it cools.
