Spiced Fried Plantain

Ingredients

4 ripe plantains

1 tsp freshly grated ginger

½ tsp ground chilli or cayenne (adjust to taste)

½ tsp ground cloves or nutmeg

Salt, to taste

Vegetable oil, for frying

Steps

  1. Peel the plantains and cut into bite-sized chunks.

  2. Combine the ginger, chilli, spice, and salt in a bowl.

  3. Toss the plantain pieces with the spice mixture until evenly coated.

  4. Heat oil in a deep pan over medium heat.

  5. Fry the plantains in batches until golden and crisp on the edges.

  6. Remove and drain briefly before serving.

Serve hot, commonly eaten on its own or with roasted peanuts. Often sold and eaten in the evening as a snack.
