Ingredients

12 rice paper wrappers

200 g cooked shrimp, halved lengthwise

200 g cooked pork belly or loin, thinly sliced

100 g rice vermicelli noodles, cooked

Lettuce leaves

Fresh herbs (mint, coriander, Thai basil)


Southern Vietnamese Dipping sauce

3 tbsp hoisin sauce

1 tbsp peanut butter

1 tsp sugar

Warm water, as needed

Chopped peanuts (optional)

Steps

  1. Prepare all fillings and arrange them within easy reach.

  2. Soak one rice paper wrapper briefly in warm water until pliable.

  3. Lay the wrapper flat and place lettuce, noodles, herbs, pork, and shrimp in the centre.

  4. Fold the bottom over the filling, tuck in the sides, and roll tightly.

  5. Repeat with remaining wrappers.

  6. Stir the dipping sauce ingredients together until smooth and pourable.

Serve immediately, with dipping sauce on the side. Commonly eaten as a light meal or shared dish.
