Lamb and Cabbage Stew

Ingredients

1.5 kg lamb (neck, shoulder, or ribs), cut into chunks

1 large white cabbage, cut into wedges

2 tbsp whole black peppercorns

1½ tsp salt

Water, to cover

Steps

  1. Place a layer of lamb in the bottom of a heavy pot.

  2. Add a layer of cabbage, then sprinkle with peppercorns and salt.

  3. Repeat layers until all ingredients are used.

  4. Add water until it just covers the contents.

  5. Bring to a gentle boil, then reduce to a low simmer.

  6. Cover and cook for about 2 hours until the lamb is very tender.

  7. Adjust seasoning before serving.

To serve

Serve hot, traditionally with boiled potatoes. Often eaten over several days.
