Ingredients
1.5 kg lamb (neck, shoulder, or ribs), cut into chunks
1 large white cabbage, cut into wedges
2 tbsp whole black peppercorns
1½ tsp salt
Water, to cover
Steps
Place a layer of lamb in the bottom of a heavy pot.
Add a layer of cabbage, then sprinkle with peppercorns and salt.
Repeat layers until all ingredients are used.
Add water until it just covers the contents.
Bring to a gentle boil, then reduce to a low simmer.
Cover and cook for about 2 hours until the lamb is very tender.
Adjust seasoning before serving.
To serve
Serve hot, traditionally with boiled potatoes. Often eaten over several days.
