Ingredients
2 cups chopped okra
1 cup chopped pumpkin or sweet potato
1 cup chopped greens (spinach, amaranth, or cassava leaves)
1 onion, chopped
2 tomatoes, chopped
1/2 cup peanut butter (unsweetened)
1–2 tablespoons oil
Salt and pepper to taste
4 cups water or light stock
Optional additions: aubergine, chilli, or dried fish for depth
Steps
Sauté the onion in a little oil until soft, then add the tomatoes and cook until they break down into a thick base.
Add the pumpkin or sweet potato and pour in the water or stock, simmering until the vegetables begin to soften.
Stir in the okra, greens, and any optional vegetables, letting them simmer gently until the stew thickens naturally.
Whisk the peanut butter into a small bowl with a ladle of hot broth to loosen it, then stir it into the pot.
Simmer for another fifteen to twenty minutes, tasting and adjusting with salt and pepper until the flavours meld and the stew becomes thick, earthy, and cohesive.
Serve warm with millet porridge, rice, or cassava.
