Ingredients

2 large barley rusks (paximadia)

3 ripe tomatoes, grated or finely chopped

3–4 tbsp extra virgin olive oil

100 g mizithra or feta cheese, crumbled

Dried oregano

Salt, to taste

Steps

  1. Lightly sprinkle the rusks with water to soften slightly.

  2. Place the rusks on a serving plate.

  3. Spoon the grated tomato evenly over the rusks.

  4. Drizzle generously with olive oil.

  5. Crumble the cheese over the top.

  6. Season with salt and a pinch of oregano.

  7. Serve immediately.

Serve at room temperature, often as a light meal or part of a shared table. Commonly eaten with additional olive oil and bread.
