Ingredients

400 g dried black or pinto beans

1 bay leaf

1.2 litres water

2 tbsp vegetable oil or pork fat

1 onion, finely chopped

3 cloves garlic, minced

Salt, to taste

Black pepper (optional)

Steps

  1. Soak the beans overnight, then drain and rinse.

  2. Place the beans, bay leaf, and water in a pot and bring to a boil.
    Reduce heat and simmer for 45–60 minutes, until the beans are tender.

  3. In a separate pan, heat the oil or fat and cook the onion until soft.

  4. Add the garlic and cook briefly until fragrant.

  5. Stir the onion mixture into the beans and simmer for a further 10–15 minutes.

  6. Season with salt and pepper and adjust the thickness with water if needed.


Serve hot with white rice. Commonly paired with vegetables, eggs, or meat dishes. The beans are often eaten daily and improve in flavour if rested briefly before serving.
