Ingredients

1 kg beef mince (coarse grind)

200 g pork fat or pork mince

2 tsp toasted coriander seeds, ground

1 tsp ground black pepper

1 tsp ground nutmeg

1 tsp ground cloves

2 tsp salt

60 ml red wine vinegar

Natural sausage casings

Steps

  1. Combine the beef, pork fat, spices, and salt in a large bowl.

  2. Add the vinegar and mix gently until just combined.

  3. Cover and rest the mixture in the fridge for at least 2 hours.

  4. Stuff the mixture into casings, forming long coils rather than short links.

  5. Cook slowly over medium heat on a grill or pan, turning regularly, until cooked through and lightly charred.

Serve hot, sliced or coiled, commonly eaten with bread, maize porridge, or salads. Most often cooked over an open fire.
